Port Wine BBQ Sauce

Port Wine BBQ Sauce

The Port Wine/BBQ sauce recipe is more of a cooking style than a recipe, so I will do my best to explain. This is for 2 chicken breasts or 2 pork chops.

Step 1: I recommend using either pork chops (bone in preferably), tenderloin, or chicken breasts. Season each side of the chicken breast/pork with a dusting (liberal or as desired) of Lawry’s seasoning salt, garlic powder (you could rub in minced garlic), black pepper, and Chipotle seasoning.

Step 2: Heat skillet to a medium/high heat with extra virgin olive oil (2 tablespoons) to prevent sticking.

Step 3: Begin to fry meat and reduce to medium heat. Sear each side for 4 or so minutes to seal in juices and to help the seasoning to stick to the meat.

Step 4: Meat should be seared on both sides with the middle still needing to cook more. At this point, you can remove the meat from the frying pan in order to start sauce or you can leave the meat in the pan and work around it, might be easier to remove meat.

Step 5: Add approximately 4-6 ounces of Port Wine, the better the bottle the better the flavor of the sauce, but a $10-$14 bottle is more than adequate. Heat should be on medium or medium-high at this point. When the port wine starts to simmer add in approximately 2 tablespoons of your favorite BBQ sauce, I prefer “Sweet Baby Rays, Sweet n’ Spicy”. Allow to come to a simmer and add the meat back to the frying pan. Continue to flip meat on each side so that the sauce starts to coat the meat. You can also spoon sauce onto meat as it’s cooking.

Step 6: As the meat is continuing to cook, the sauce will be reducing and becoming thicker (medium heat). When the sauce starts to get thicker add a splash (2 or so ounces) of the port in order to deglaze the pan. Don’t forget to keep flipping the meat (more frequently now). At this point, I like to add approximately 1/2 of a minced Serrano Pepper for extra heat (you could use any type of pepper). If you do not like very spicy food you may want to add less or nor add at all.

Step 7: Once the meat is cooked, give it a final coat of sauce using a spoon and serve.

This whole cooking process will take about 20 minutes, more depending on how low of a temp you cook with.
